Instructions

Preheat the oven to 150 °C (fan). A low temperature is essential so the nuts don't burn before the flakes become crispy. Line a baking sheet with parchment paper.

In a large bowl, mix the dry ingredients: rolled oats, chopped nuts, seeds, salt and cinnamon.

In a separate bowl, mix the wet ingredients: melted coconut oil, maple syrup (or honey) and vanilla. Pour over the dry ingredients and mix well so every flake is lightly moistened.

Transfer the mixture onto the baking sheet and spread it evenly with a spatula. For bigger clusters, press the mixture firmly down onto the baking sheet with the spatula so it becomes compact.

Bake for 20–25 minutes. Halfway through baking (after about 10 minutes), turn the baking sheet, but don't stir the mixture too much if you want clusters. Bake until golden brown.

Cooling is the most important step. Remove the baking sheet from the oven and let the granola sit for at least 45 minutes. As it cools, it will set and become crispy. Only once it's cool should you break it up and mix in the dried fruit.

Nutritional benefits

Beta-glucans, naturally found in oats, have been shown to help maintain normal blood cholesterol levels, while unsaturated fats from nuts protect the cardiovascular system.
