Instructions

In a mixing bowl, use a whisk to thoroughly combine the cottage cheese, Greek yogurt, honey, vanilla and lemon zest until the mixture becomes completely smooth and creamy.

Wash the figs, pat them dry and cut them in half.

Heat coconut oil or butter in a pan over medium heat. Place the fig halves cut-side down in the pan and cook for 2–3 minutes, until they soften slightly.

Drizzle the figs with honey and balsamic vinegar. Cook for another minute, until the honey starts to bubble and creates a sticky caramel. Remove the pan from the heat.

Divide the cottage cheese cream between two bowls. Arrange the warm caramelized figs on top and drizzle with the remaining sauce from the pan.

Sprinkle everything with chopped walnuts for crunch and serve immediately.
