Preheat the oven to 200 °C. Line a baking sheet with parchment paper.

In a large bowl, prepare the marinade: mix olive oil, balsamic vinegar, crushed garlic, oregano, thyme, lemon zest and juice.

Pat the chicken thighs dry with paper towels (this ensures crispy skin). Place them in the bowl with the marinade and coat well.

Add the sliced bell pepper, zucchini and red onion to the bowl (set the broccoli aside for later). Mix everything together so the vegetables are evenly coated with the flavors.

Spread the contents of the bowl onto the baking sheet. Place the chicken skin-side up among the vegetables. Season with salt and pepper.

Bake in the preheated oven for 20 minutes. Then quickly take the baking sheet out, arrange the broccoli florets in the empty spaces and lightly drizzle them with the juices from the pan.

Bake for an additional 15 minutes, until the chicken is golden brown and the broccoli is lightly crisp. Before serving, let the dish rest for 5 minutes so the juices in the meat can settle.
