Instructions

Preheat the oven to 200 °C. Wash the chicken breasts and pat them dry.

Using a sharp knife, cut a pocket into each fillet, without cutting all the way through. Lightly salt and pepper the meat on the outside and inside.

In a bowl, mix the spinach (which you've briefly wilted in a pan beforehand and drained), crumbled feta cheese, sun-dried tomatoes, and garlic.

Fill the pockets with the prepared filling and close them with toothpicks so the filling doesn't escape during baking.

Brush the outside of the meat with a mixture of olive oil, oregano, and sweet paprika.

In a pan over high heat, quickly sear the fillets (2 minutes per side) until golden and the juices are sealed in.

Transfer the pan to the oven and bake for another 12–15 minutes, until the chicken is fully cooked but still juicy. Remove the toothpicks before serving.
