In a large pot, heat the oil and fry the ground meat until evenly browned. Break it apart with a spatula while cooking.

Add the chopped onion and carrot to the meat. Sauté for 5 minutes, until the onion softens. Finally, add the garlic and tomato paste and stir for another 1 minute.

Add the shredded cabbage to the pot and sprinkle with ground paprika, thyme, salt and pepper. Mix well.

Pour in the stock and pureed tomatoes. Cover the pot and cook over medium heat for 20–25 minutes, or until the cabbage is completely soft.

Stir in cooked brown rice (or raw cauliflower rice) into the soup and cook for another 5 minutes to let the flavors combine.

Remove from heat and stir in the balsamic vinegar and chopped parsley. The vinegar will enhance all the flavors and add depth to the soup.

Serve hot, optionally with a spoonful of Greek yogurt for a creamy texture.
