In a medium-sized bowl, mix the ricotta, Greek yogurt, maple syrup and vanilla extract. Whisk with a whisk or mixer for about 2 minutes, until the cream becomes completely smooth and airy.

Prepare cooled espresso coffee in a deep plate.

Cut each ladyfinger biscuit in half and dip it in the coffee for a second (be careful not to let it get too soggy). Place two halves on the bottom of each glass.

Spread a layer of the prepared cream over the biscuits (about 2 tablespoons per glass).

Repeat the process with a second layer of soaked biscuits and finish with the remaining cream. Smooth the surface nicely.

Place the glasses in the refrigerator for at least 2 hours, so the biscuits soften and the cream sets.

Just before serving, sift cocoa powder over the tiramisu and add grated dark chocolate.
