Line a baking pan with parchment paper so it hangs over the edges (for easier removal). In a larger pan over medium heat, dry-toast the oat flakes and chopped almonds (about 3-5 minutes) until fragrant and lightly browned. This is key for a rich flavor.

Transfer the toasted oats and nuts to a large bowl. Mix in the pumpkin seeds, chia seeds, cinnamon and salt. If using dried fruit, add it now.

In a smaller saucepan over low heat, warm the honey (or maple syrup) and almond butter. Stir only long enough for the ingredients to combine and the mixture to become liquid (it must not boil!). Remove from heat and stir in the vanilla.

Pour the liquid mixture over the dry ingredients. Mix quickly and thoroughly with a spatula so that all the flakes are evenly coated with the sticky mixture. If adding chocolate, wait a minute for the mixture to cool slightly, otherwise it will melt immediately (unless that's what you want).

Pour the mixture into the prepared baking pan. With damp hands or the bottom of a jar, press the mixture very firmly against the bottom of the pan. The more you press, the less the bars will crumble. Place in the refrigerator for at least 2 hours to set. Then, using the parchment paper, lift the slab out of the pan and cut into 12 bars.
