Pour the chickpeas into a strainer and rinse them under running water for at least one minute to remove all the salty taste of the liquid from the can. For an even creamier texture, peel the chickpeas (gently squeeze each bean to remove the translucent skin).

Add the rinsed chickpeas, nut butter, maple syrup, oat flour, vanilla, and salt to a food processor.

Mix on high speed for 2–3 minutes, until the mixture becomes completely smooth and creamy. If needed, stop and scrape down the sides of the bowl with a spatula.

Transfer the mixture to a bowl and stir in the dark chocolate chunks by hand using a spatula.

Serve the 'cookie dough' immediately or store it in a sealed container in the refrigerator for up to 4 days.
