Brew strong coffee and pour it into a deep plate. Add rum or amaretto if desired. Let it cool completely (this prevents the ladyfingers from becoming mushy).

In one bowl, whip the cold heavy cream with a mixer to medium peaks. Don't overwhip it – the peaks should be soft so the cream stays airy.

In another bowl, quickly mix the mascarpone, powdered sugar and vanilla, just enough for the ingredients to combine. Don't mix too fast, or the cheese will become runny.

Gently fold the whipped cream into the mascarpone mixture by hand using a spatula (the "bottom to top" technique) to preserve the volume of the cream.

Quickly dip each ladyfinger into the coffee (1–2 seconds on each side) and arrange them on the bottom of the baking dish. Don't soak them too long, as they will soften further while chilling.

Spread half of the cream over the layer of ladyfingers and smooth it out. Repeat the process with the remaining ladyfingers and the rest of the cream.

Cover the dessert and place it in the fridge for at least 4 hours (preferably overnight) so the flavors meld and the cream sets. Before serving, generously dust the top with cocoa powder.
