Heat olive oil in a pan and sauté the chopped onion until translucent. Add the drained chickpeas and fry for 3–4 minutes until slightly crispy.

Add the chopped garlic and smoked paprika. Once the garlic becomes fragrant, add the baby spinach to the pan. Stir just until the spinach wilts slightly.

In a bowl, whisk the eggs with salt and pepper. Lower the heat to medium and pour the egg mixture over the chickpeas and spinach.

Using a spatula, slowly push the eggs from the edge toward the center until they are cooked but still moist. Remove from heat and sprinkle with feta cheese, if desired.
