Preheat the oven to 190 °C. Wash the apples thoroughly. Using a knife, carefully core out the center with the seeds, but be careful not to pierce the bottom of the apple (this way the filling will stay inside). If the apples don't stand upright, cut a thin slice off the bottom to stabilize them.

In a small bowl, mix the oats, chopped walnuts, cinnamon, nutmeg and salt. Add the maple syrup and melted butter. Stir well so that all the ingredients are evenly moistened.

Place the cored apples in a baking dish. Using a spoon, evenly distribute the filling into the center of each apple. Gently press the filling down to fit as much as possible inside, though some can peek over the top.

Pour warm water or apple juice into the bottom of the baking dish (around the apples, not over them). This will create steam and prevent the apples from drying out or burning. Bake for 35–45 minutes, or until the apples are soft (check with a fork) and the filling is golden brown.

Remove the apples from the oven and let them rest for 5 minutes. Before serving, you can drizzle them with the liquid left in the baking dish.
