Place the almonds (or walnuts) and oats in a food processor. Blend until you get a coarse flour. Add the dates, melted coconut oil, and a pinch of salt. Blend again until the mixture starts to stick together into a ball (if you press it between your fingers, it should hold its shape).

Transfer the mixture into a pie pan. Using your fingers or the back of a spoon, press it evenly onto the bottom and edges of the pan to create a firm crust. Place in the freezer for 10 minutes to set.

Meanwhile, in a bowl, mix together the Greek yogurt, honey, vanilla, and lemon zest. Tip: If your yogurt is too runny, strain it beforehand through cheesecloth or stir in a spoonful of cream cheese for better stability when slicing.

Remove the chilled base from the freezer. Spread the yogurt cream evenly over it.

Arrange the fresh fruit on top. Place the pie in the refrigerator for at least 2 hours, so the cream cools well and firms up. Before serving, drizzle with a thin stream of honey if desired.
