Preheat the oven to 180 °C and grease a baking dish with coconut oil.

In a large bowl, mix the cottage cheese, Greek yogurt, egg yolks, maple syrup, vanilla, and lemon zest. Add the spelt semolina and cinnamon, and stir well.

Peel two apples and grate them directly into the cottage cheese mixture. Let it sit for 5 minutes so the semolina softens slightly.

In a separate bowl, whisk the egg whites with a pinch of salt into stiff peaks. Gently and slowly fold the whipped egg whites into the cottage cheese mixture with a spatula to keep it airy.

Pour the mixture into the prepared baking dish and spread it out evenly. Slice the third apple into thin slices and arrange them on top of the bake.

Bake for 35–40 minutes, until the bake turns golden brown and feels firm to the touch. Let it rest for 10 minutes before cutting to allow the texture to set.
