Cook the pasta in salted boiling water, but drain it 2 minutes earlier than stated on the package (al dente). Rinse with cold water to stop the cooking process.

In a pan with a little oil, quickly sauté the chopped garlic and spinach until wilted. Drain the spinach and chop it slightly if needed.

In a bowl, mix the ricotta, egg, sautéed spinach, half of the parmesan, nutmeg, salt, and pepper.

Pour the tomato passata, to which you've added oregano and a bit of salt, into a baking dish.

Fill each pasta shell with the prepared filling and place it in the baking dish on top of the tomato sauce.

Sprinkle everything with the remaining parmesan and bake in a preheated oven at 200 °C for about 20–25 minutes, until the cheese is golden and baked through.
