In a bowl, mix the oat flour, peanut butter, maple syrup and salt. You should get a thick but sticky mixture (like cookie dough). If it's too dry, add a teaspoon of water. Press the mixture evenly into the bottom of a baking pan lined with parchment paper. Place in the freezer.

Put the dates (if dry, soak them in hot water for 10 min beforehand) into a blender together with the peanut butter, salt and vanilla. Blend until smooth. If the blender is struggling, add a tablespoon of warm water. The texture should be thick and creamy, not runny.

Take the pan out of the freezer. Spread the date caramel over the base. Sprinkle the roasted peanuts on top and gently press them into the caramel with your palm. Return to the freezer for at least 30–60 minutes to set.

Take the set mixture out of the pan and cut it into 12 bars. Melt the dark chocolate with coconut oil over steam or in the microwave.

Dip each bar into the chocolate (or drizzle it over) and place on parchment paper. Wait a few minutes for the chocolate to set. Store in the refrigerator.
