In a small bowl, mix the Greek yogurt, vanilla extract and honey (if using). Whisk quickly until the yogurt becomes light and creamy. Place in the freezer for 5–10 minutes if you want a more "ice cream-like" texture (this is optional).

Peel the banana and carefully cut it in half lengthwise. Place both halves on an oblong plate, with the curved side facing outward (like a "boat").

Using an ice cream scoop or a regular spoon, scoop the prepared yogurt into three mounds ("scoops") between the banana halves.

Sprinkle sliced strawberries, blueberries and crunchy granola (or nuts) over the yogurt and banana.

Finally, drizzle with melted dark chocolate or sprinkle with chocolate shavings. Add a cherry on top if desired. Serve immediately.
