Preheat the oven to 180 °C and line a baking sheet with parchment paper.

In a large bowl, mix the rolled oats, oat flour, cinnamon, baking powder, and salt.

Make a well in the center and add the Greek yogurt, maple syrup, egg, and vanilla. Mix everything together well until you get a thick, sticky batter.

Gently fold the finely chopped apples and chopped walnuts into the batter.

Using a spoon, place mounds of the batter onto the baking sheet and lightly flatten them into a cookie shape (the cookies won't spread much during baking).

Bake for 12–15 minutes, or until the edges are golden brown. Let the cookies sit on the baking sheet for 5 minutes to firm up, then transfer them to a wire rack to cool.
