If the dates aren't very soft and juicy, soak them in warm water for 10 minutes, then drain thoroughly. This is key for the juiciness of the balls.

Add the oats to a food processor and pulse briefly (a few pulses) to get a coarse flour, but leave some pieces whole for texture.

Add the drained dates, peanut butter, chia seeds, vanilla and salt to the oats. Blend until the ingredients come together into a uniform, sticky mass. If the mixture is too dry, add 1 tablespoon of warm water.

Transfer the mixture to a bowl. Stir in the chopped dark chocolate by hand. Do not blend the chocolate in the food processor, as it will melt and lose its crunchiness.

Now it's time to shape the balls. Scoop out about 1 heaping tablespoon of the mixture and roll it into a ball between your palms. Repeat until you've used up all the mixture (you'll get about 15 balls).

Place the balls on a plate lined with parchment paper and refrigerate for at least 15–30 minutes to firm up. Store them in a sealed container in the fridge for up to 1 week.
