Wash the fruit thoroughly and peel if necessary (apples and pears can be left with their skin on). Cut it into thin, even slices between 2 and 4 mm thick.

In a bowl, prepare a solution of water and lemon juice. Soak the fruit slices for 5 minutes to prevent oxidation (browning) and preserve the color.

Drain the slices and dry them well with a clean kitchen towel or paper towel.

Line a baking tray with baking paper. Arrange the fruit in a single layer so the pieces don't overlap, allowing for even air flow.

Dry in the oven at 50–60 °C (fan function). Leave the oven door slightly open (about the width of a cooking spoon) so moisture can escape. The process takes 6 to 12 hours, depending on the water content of the fruit.

The fruit is ready when it is pliable (like leather) or crispy (like chips), with no visible moisture. Let it cool completely before storing it in airtight glass jars.
