Instructions
1
Soak the dried porcini mushrooms in 200 ml of hot water for 15 minutes. After this time, drain them (reserve the liquid) and finely chop.
2
In a pot with olive oil, sauté the leek and grated carrot until the leek softens. Add the fresh mushrooms and cook over high heat for about 8 minutes, until they release their water and turn golden brown.
3
Stir in the garlic, chopped soaked porcini mushrooms, and thyme. Sauté just until the garlic becomes fragrant, then add the rinsed buckwheat groats.
4
Pour in the vegetable stock and the reserved porcini soaking liquid (being careful of any sediment). Add the bay leaves.
5
Bring to a boil, reduce the heat, and simmer covered for 20–25 minutes, or until the buckwheat groats are tender.
6
Remove the bay leaves before serving. Season to taste with salt and generously with pepper.
7
Serve the soup in deep bowls and sprinkle with fresh parsley.
Nutritional benefits
