In a large pan, sauté the chicken pieces in olive oil until golden brown. Remove the meat from the pan and set it aside.

In the same pan, add the sliced leek and simmer over medium heat for 5–8 minutes, until completely softened. Toward the end, stir in the chopped garlic.

Sprinkle the leek with flour and stir for 1 minute. Gradually pour in the stock and cream while stirring constantly to get a smooth sauce.

Return the chicken to the sauce, stir in the mustard, thyme, salt, and pepper. Cook for another 2 minutes until the sauce thickens, then pour the filling into the baking dish.

Roll out the puff pastry and place it over the baking dish like a lid. Press the edges of the dough firmly against the edge of the dish, then make a small cut in the center with a knife to let steam escape.

Brush the pastry with beaten egg and bake in a preheated oven at 200 °C for about 20–25 minutes, until the pie is golden brown and crispy.
