Preheat the oven to 200 °C. Wash the chicken breasts and dry them thoroughly with a paper towel.

Using a sharp knife, cut a slit into each fillet to create a pocket. Be careful not to cut all the way through the meat.

Lightly salt the inside of the pocket, then fill it with spinach leaves, slices of mozzarella, chopped sun-dried tomatoes and a little chopped garlic.

Secure the edges of the meat with toothpicks so the filling doesn't leak out during baking. Season the outside of the fillet with salt, pepper and oregano.

Heat oil in a pan and sear the fillets over high heat (about 2 minutes on each side) until they get a golden-brown crust.

Transfer the fillets to a baking dish and bake them in the oven for another 10–12 minutes, until the meat is completely cooked and the cheese has melted. Let rest for 2 minutes before serving.
