Instructions
- 1Preheat the oven to 200 °C. Wash the chicken breasts and pat them dry.
- 2Using a sharp knife, cut a pocket into each fillet, without cutting all the way through. Lightly salt and pepper the meat on the outside and inside.
- 3In a bowl, mix the spinach (which you've briefly wilted in a pan beforehand and drained), crumbled feta cheese, sun-dried tomatoes, and garlic.
- 4Fill the pockets with the prepared filling and close them with toothpicks so the filling doesn't escape during baking.
- 5Brush the outside of the meat with a mixture of olive oil, oregano, and sweet paprika.
- 6In a pan over high heat, quickly sear the fillets (2 minutes per side) until golden and the juices are sealed in.
- 7Transfer the pan to the oven and bake for another 12–15 minutes, until the chicken is fully cooked but still juicy. Remove the toothpicks before serving.
