Instructions

Preheat the oven to 170 °C and line a baking pan with baking paper.

In a large bowl, mix the rolled oats, chopped pistachios, oat flour, cinnamon and salt.

In a smaller bowl, mix the maple syrup, melted coconut oil and vanilla. Pour the wet mixture into the dry ingredients.

Mix everything together thoroughly so that all the oats are evenly coated. The mixture should be sticky.

Transfer the mixture to the baking pan and press it firmly against the bottom with a spatula or the base of a glass. The more firmly you press the mixture, the less the squares will crumble later.

Bake for 20–25 minutes, or until the edges turn golden brown. Halfway through baking, you can rotate the pan for even coloring.

Remove from the oven and immediately sprinkle with a pinch of sea salt. Leave the squares in the pan to cool completely before cutting. This is essential for a firm texture.
