Instructions

In a bowl, mix the spelt flour, baking powder, salt, and Greek yogurt. Knead by hand into a smooth dough that doesn't stick to your hands (add a tablespoon of flour if needed).

Quickly sauté the fresh spinach in a pan until wilted, then squeeze it well to remove all the liquid. Chop it and mix with the ricotta, grated cheese, and garlic.

Roll out the dough on a floured surface into a rectangle about 0.5 cm thick.

Spread the filling evenly over the dough, leaving a 1 cm border free. Roll the dough tightly into a log.

Using a sharp knife, cut the log into 12 even rolls. Place them on a baking sheet lined with parchment paper.

Brush the rolls with a mixture of olive oil, parsley, and garlic powder. Bake at 200 °C for about 18–22 minutes, until golden brown.
