Instructions
- 1Quickly blanch a third of the peas (100 g) in a ladleful of stock and blend them into a smooth puree together with half of the mint leaves. This will give the risotto a vivid green color and creamy texture.
- 2In a pan with olive oil, sauté the finely chopped shallot until translucent. Add the rice and toast it for 1–2 minutes, until the edges of the grains become translucent.
- 3Pour in the white wine and stir until the liquid has completely evaporated.
- 4Begin gradually adding the hot stock. After 5 minutes of cooking, add the remaining whole peas (200 g) to the pan. Stir the rice slowly the whole time.
- 5When the rice is almost cooked (about 15 minutes), stir the prepared pea puree into the pan. This will immediately color and bind the risotto.
- 6Remove from the heat for the final "mantecatura". Add cold butter, grated Parmesan, the remaining finely chopped mint, and lemon zest. Cover and let rest for 2 minutes.
- 7Before serving, check the consistency – the risotto should be "all'onda" (wavy), meaning not too dry. If needed, add another spoonful of stock. Serve with freshly ground pepper.
