Prepare the rice noodles according to the package instructions (usually by covering them with boiling water in a bowl and letting them sit for 5–7 minutes). Once soft, drain and rinse under cold water to prevent sticking.

Heat oil in a pan and fry the chicken breast strips. Cook for 5–7 minutes, until golden brown and cooked through. Season with a minimal amount of salt (the soy sauce in the dressing is already salty).

Meanwhile, in a small bowl, mix the peanut butter, soy sauce, lime juice, ginger and honey. Gradually add warm water, stirring until you get a smooth, pourable cream.

In a large bowl, combine the cooked noodles, cooked chicken, carrot, bell pepper and cucumber.

Pour the prepared peanut dressing over all the ingredients and mix well so the sauce evenly coats everything.

Serve the dish in deep plates, sprinkled with spring onion, chopped peanuts and fresh herbs.
