Preheat the oven to 175 °C. Line the baking pan with parchment paper or lightly grease it with coconut oil.

In a first bowl, thoroughly mash the bananas with a fork into a smooth puree. Add the eggs, Greek yogurt, vanilla, and melted coconut oil. Mix everything together with a hand whisk until you get a uniform mixture.

In a second bowl, mix the oat flour, protein powder, baking powder, baking soda, cinnamon, and salt. Make sure there are no lumps in the protein powder.

Slowly add the dry ingredients to the wet ones. Gently mix with a spatula just enough for the ingredients to combine – don't overmix, so the bread doesn't become tough.

Pour the mixture into the prepared baking pan and, if desired, place half a banana on top. Bake for 40–50 minutes. The bread is done when a toothpick inserted into the center comes out clean.

Leave the bread in the pan for at least 10 minutes, then transfer it to a wire rack to cool completely before slicing.
