Instructions
- 1Open a can of full-fat coconut milk that has been in the fridge overnight, and scrape out just the hard, thick part (about 120 g). Save the liquid for smoothies.
- 2Put the shredded coconut, coconut cream, maple syrup, vanilla, and a pinch of salt into a food processor. Mix for 30–60 seconds until the ingredients combine and become slightly sticky. Tip: If you press the mixture between your fingers and it holds its shape, it's perfect.
- 3Using your hands, scoop the mixture and shape it into 12 rectangular bars. Press firmly so they are compact. Place them on a board lined with parchment paper.
- 4Put them in the freezer for 45–60 minutes. This is essential so the bars don't fall apart while dipping in the hot chocolate.
- 5Melt the dark chocolate together with a teaspoon of coconut oil over a water bath (double boiler). Stir until smooth and glossy.
- 6Dip the chilled coconut bars into the melted chocolate (use two forks to make turning easier). Let the excess chocolate drip off and return the bars to the parchment paper.
- 7Place in the fridge for 10 minutes for the chocolate to fully set. Store in the fridge for up to 7 days.
