Wrap the tofu in paper towels and weigh it down for 10–15 minutes to press out as much water as possible. This is key for crispiness.

Cut the pressed tofu into 2 cm cubes. Place them in a bowl, sprinkle with corn starch and salt, and gently toss to evenly coat the cubes.

Heat oil in a pan and fry the tofu over medium heat for about 10–12 minutes. Turn the cubes occasionally until they are golden-brown and crispy on all sides.

While frying, whisk together the peanut butter, soy sauce, maple syrup, rice vinegar, ginger, garlic, and chili in a small bowl. Gradually add warm water until you get a smooth, pourable sauce.

Once the tofu is crispy, pour the prepared marinade into the pan. Cook for another 1–2 minutes over low heat until the sauce thickens and fully coats the tofu.

Serve immediately, preferably with cooked brown rice or quinoa and fresh vegetables.
