Instructions

1
Put the cottage cheese, cocoa powder, maple syrup, vanilla extract and a pinch of salt into the blender jug.
2
Blend the ingredients on high speed for about 1 to 2 minutes. Stop the blender once in between to scrape down the sides with a spatula.
3
If the mixture is too thick, add a tablespoon or two of almond milk until you reach a completely smooth, velvety texture with no lumps.
4
Taste the pudding and, if you prefer a sweeter flavor, add a little more sweetener as desired.
5
Pour the mixture into serving bowls. For the best experience, place the pudding in the fridge for 15 minutes before serving so it firms up slightly.
6
Before serving, sprinkle the top with cacao nibs, coconut or fresh berries.

Nutritional benefits

Thanks to the high content of casein (a type of milk protein) in cottage cheese, this meal helps provide muscles with a long-lasting supply of protein and supports tissue regeneration.
