In a bowl, mix the Greek yogurt, honey, and vanilla extract until the mixture is completely smooth and creamy.

Sprinkle about one teaspoon of granola into each cavity of the silicone mold. This will serve as a crunchy base and make the bites easier to hold.

Spoon the yogurt mixture over the granola, filling the molds almost to the top.

Gently press pieces of strawberries and a few blueberries into the top of each bite. Sprinkle with chopped nuts, if desired.

Place the mold in the freezer for at least 3 to 4 hours, or preferably overnight, until the yogurt is completely set.

Once the bites are completely frozen, carefully remove them from the molds. Serve immediately, and store any leftovers in an airtight container in the freezer.
