Pour the millet into a strainer and rinse it thoroughly under hot water until the water runs clear (this removes the bitterness). In a saucepan, bring a mixture of milk, water and a pinch of salt to a boil. Add the millet and cook over medium heat for about 15 minutes, until it absorbs most of the liquid but is still creamy. Remove from heat and let it cool to lukewarm.

While the porridge is cooling, grate two apples, and cut the third apple into thin wedges for decoration. Soak the raisins in warm water for 10 minutes, then drain them.

In a larger bowl, mix the cottage cheese, eggs, honey, cinnamon, vanilla and lemon zest into a smooth mixture. Stir in the cooled cooked millet, the grated apples, chopped walnuts and drained raisins.

Preheat the oven to 180 °C. Lightly grease a baking dish (with a little butter or coconut oil). Spread the mixture evenly in the baking dish. Arrange the sliced apple wedges nicely on top.

Bake for 35–40 minutes, until the surface turns golden brown and the mixture sets (it should not be liquid). Let it rest for 10 minutes before slicing, so the flavors combine and the texture firms up.
