First prepare the dates. If the dates are dry or firm, soak them in warm water for 10 minutes, then drain well. If using fresh Medjool dates, skip this step.

Add the dates to a food processor and blend into a smooth paste. Add the almond butter, vanilla, and a pinch of salt, then mix again until the ingredients are combined.

Add the almond flour and cocoa powder to the food processor. Blend in short bursts until you get a thick, sticky mixture that holds together. If the mixture is too dry, add a tablespoon of warm water.

Shape the balls. Scoop the mixture with a spoon and roll it between your palms into 12 evenly sized balls.

Roll the balls in chopped almonds or cocoa powder. Place them on a tray lined with parchment paper and chill in the refrigerator for at least 30 minutes to firm up.
