Instructions
1
Prepare the tomatoes by cutting them in half and removing the watery core with the seeds. Cut the tomato flesh into small cubes and place them in a colander for 5 minutes to drain off excess liquid.
2
In a bowl, mix the diced tomatoes, finely chopped fresh basil, one tablespoon of olive oil, balsamic vinegar, salt and pepper. Let it rest at room temperature for 10–15 minutes to allow the flavors to combine.
3
Cut the baguette into slices about 1.5 cm thick. Place them on a baking sheet and toast them in the oven (grill function) until golden brown, about 2–3 minutes on each side.
4
While the bread slices are still hot, drizzle them with the remaining olive oil and rub them firmly with a whole clove of garlic so the bread absorbs the aroma.
5
Top each slice generously with the tomato mixture. Garnish with an extra basil leaf and serve immediately.
Nutritional benefits
Thanks to the high content of the antioxidant lycopene from tomatoes and healthy monounsaturated fats from olive oil, this dish supports heart and cardiovascular health.
