Preheat the oven to 150 °C. A low temperature is key so the almond flour doesn't turn bitter or burn before the crackers become crispy.

In a large bowl, mix the almond flour, salt, and spices. Add the egg white and knead by hand until you get a firm ball of dough that doesn't stick to your fingers.

Place the dough between two sheets of baking paper. Roll it out as thin as possible (about 1–2 mm) with a rolling pin. The thinner the dough, the crispier the chips will be.

Remove the top sheet of paper. Using a pizza cutter, cut the dough into triangles of the desired size. Do not move the triangles, leave them in the shape you cut them.

Together with the bottom baking paper, transfer the dough onto a baking sheet. Lightly brush it with olive oil using a pastry brush.

Bake for 10–12 minutes. Watch closely – as soon as the edges turn golden brown, the chips are done.

Remove from the oven and let cool completely on the baking sheet. The chips will become maximally crispy only once fully cooled.
