Instructions

Wash the zucchini and use a mandoline to slice them into the thinnest, most even rounds possible (about 1-2 mm).

Place the slices on paper towels and lightly salt them. Let sit for 10 minutes, then use a dry towel to firmly blot away all excess moisture. This is the key step for crispiness!

Preheat the oven to 110 °C (a low temperature prevents the chips from becoming bitter or burning before they turn crispy).

In a bowl, gently mix the dried zucchini with olive oil, garlic, paprika and pepper.

Line a baking sheet with baking paper. Arrange the slices on the sheet so they don't overlap. Sprinkle each round individually with a little grated parmesan.

Bake for 45–60 minutes. Turn the baking sheet halfway through. The chips are done when the edges are golden brown and the centers are no longer soft.

Remove the chips from the oven and leave them on the baking sheet for another 5–10 minutes, so they fully firm up as they cool.
