Chop the chocolate into small pieces and melt it over a water bath (make sure the bottom of the bowl doesn't touch the water). Once the chocolate is smooth, remove it from the heat and let it cool slightly to room temperature.

Mix the maple syrup, espresso powder, vanilla and Greek yogurt into the melted chocolate. Stir until you get a uniform, thick mixture.

In another, completely clean bowl, whisk the egg whites with a pinch of salt. Whisk at medium speed until you get stiff peaks (the foam shouldn't fall out if you turn the bowl upside down).

Add one spoonful of the whipped egg whites to the melted chocolate and quickly whisk it in with a whisk to lighten the mixture slightly.

Add the remaining whipped egg whites gradually. Fold them in gently with a spatula using figure-eight motions to keep as many air bubbles in the mixture as possible. Don't mix too vigorously.

Divide the mousse into small glasses and place them in the refrigerator for at least 2 hours, until firm and stable.
