In a shallow bowl, use a whisk to beat the whole egg, egg whites, Greek yogurt, and milk until frothy. Add the protein powder, cinnamon, and salt. Mix well to break up any lumps of protein powder (the yogurt will help create a creamy texture).

Heat a pan over medium-low heat and grease it. Place a slice of bread into the mixture. Let it sit for 10–15 seconds, then flip it and soak for another 10 seconds. The bread should absorb the liquid but must not fall apart.

Place the bread in the heated pan. Cook slowly for 2–3 minutes on each side until golden brown. Note: Since the mixture contains protein powder, it can burn faster than a regular "shmorn," so the heat must not be too high.

Serve the cooked toast immediately with fresh fruit or a spoonful of Greek yogurt for extra juiciness.
