Break the dark chocolate into pieces and melt it over a water bath or in the microwave (in 20-second intervals to prevent burning). Let it cool slightly, but it must remain liquid.

Place the Greek yogurt in a bowl. It's important that the yogurt is not ice-cold (it should be at room temperature), otherwise the chocolate will seize on contact and form lumps. Stir the vanilla, maple syrup (or honey) and a pinch of salt into the yogurt.

Sift the cocoa powder into the yogurt mixture and add the protein powder (if using). Mix well with a whisk to get a smooth, lump-free mixture.

Slowly pour the melted (lukewarm) chocolate into the yogurt mixture while whisking quickly at the same time. This will create a rich, glossy and thick texture, similar to a real mousse. If the mixture is too thick, add a spoonful of almond milk.

Spoon the mousse into small glasses. It can be served immediately, but for the best texture, place it in the refrigerator for at least 30 minutes to let the flavors combine and the mixture set further.
