In a bowl, mix Greek yogurt and vanilla protein powder until you get a completely smooth mixture without lumps.

Add gingerbread spices, molasses (or honey), and a small pinch of salt. Mix well again so the festive flavors are evenly distributed.

Stir in the chia seeds and almond milk. The almond milk will help the chia seeds swell more easily without the pudding becoming too thick.

Pour the pudding into a glass jar and seal it tightly.

Place in the refrigerator for at least 2 hours (ideally overnight) so the chia seeds swell and the pudding gets its characteristic texture.
