Heat oil in a large pot. Pat the beef cubes dry with a paper towel, season with salt and pepper, then sear them in several batches over high heat until well browned on all sides. Remove the meat from the pot and set it aside.

Add the onion and celery to the same pot. Sauté for 5 minutes, until the vegetables soften and scrape up the bits stuck to the bottom of the pot.

Stir in the chopped garlic and tomato paste. Sauté for another 1 minute, then pour in the red wine (if using) and cook for 2 minutes to let the alcohol evaporate.

Return the meat and any juices collected on the plate to the pot. Add the mushrooms, bay leaves, and thyme.

Pour in the beef stock until the meat is covered. Once it comes to a boil, reduce the heat to low, cover the pot, and cook for about 60 minutes.

Add the prepared radishes to the pot. Cover and cook for an additional 20–30 minutes, until the meat is completely tender and the radishes have a texture similar to cooked potatoes.

If you want a thicker sauce, uncover the pot for the last 10 minutes. Before serving, remove the bay leaves and sprinkle with fresh parsley.
