Instructions

Wash the zucchini and slice them into long, thin strips (about 3–4 mm) using a mandolin or vegetable peeler.

Place the slices on paper towels, lightly salt them, and let them sit for 10 minutes to release water. Then blot the tops dry with a dry towel.

Meanwhile, in a bowl, mix the cottage cheese, egg, grated parmesan, minced garlic, chopped basil, salt, and pepper. Stir until you get a smooth cream.

Pour the tomato passata into a baking dish, add the olive oil and oregano, and spread it evenly over the bottom.

Spread a heaped teaspoon of the cottage cheese filling onto each zucchini slice, roll it tightly, and place it in the baking dish with the sauce (seam facing down).

Sprinkle the rolls with grated mozzarella and bake in a preheated oven at 200 °C for about 20–25 minutes, until the cheese turns golden.

Let the dish rest for 5 minutes before serving, and garnish with fresh basil leaves.
