Preheat the oven to 200 °C. Place the cherry tomatoes in a baking dish, drizzle with a little oil and balsamic vinegar. Bake for 15–20 minutes, until they burst and lightly caramelize.

Meanwhile, in a wide pan, sauté the shallot in olive oil until translucent. Add the rice and toast it for 2 minutes, until the edges of the grains become glossy.

Add the garlic and half of the roasted tomatoes (together with their juice). Gradually start adding the hot broth to the rice, one ladle at a time.

Stir the risotto constantly to release the starch. Add a new ladle of liquid only once the rice has absorbed the previous one. Repeat the process for about 18 minutes, until the rice is al dente.

Remove the pan from the heat. Stir in the grated parmesan, chopped basil, and the remaining roasted tomatoes. Season with salt and pepper to taste.

Divide the risotto between two plates. Place half a burrata in the center of each, cut it slightly so its creamy center spreads over the risotto, and garnish with fresh basil leaves.
