In a small bowl, mix the gelatin with two tablespoons of cold almond milk and let it swell (about 5 minutes).

In a saucepan over medium heat, warm the heavy cream and the remaining almond milk, but do not let it boil.

In a separate bowl, whisk the egg yolks with erythritol and a pinch of salt until the mixture becomes lighter.

Slowly pour half of the warm cream into the egg mixture while whisking constantly (tempering), then pour everything back into the saucepan.

Cook over low heat, stirring constantly, for 5–7 minutes until the pudding thickens. Add the swollen gelatin and vanilla and stir until the gelatin is completely dissolved.

Pour the pudding into serving glasses and place in the refrigerator for at least 3 hours. Add fresh berries before serving.
