Put the cottage cheese, eggs, ground oats, baking powder, vanilla, salt and lemon zest into a blender or a tall container. Mix for about 30 seconds, until the mixture becomes completely smooth and homogeneous.

Let the mixture rest for 5 minutes. This allows the oats to absorb moisture, ensuring the pancakes don't spread out while cooking.

Heat a pancake pan over medium heat and lightly grease it with coconut oil. Using a spoon, pour small circles of the mixture (about 2 tablespoons per pancake).

Cook the pancakes for 2–3 minutes on one side, until small bubbles appear on the surface and the edges look cooked. Carefully flip them and cook for another 1–2 minutes on the other side until golden brown.
