Instructions
- 1Pour the forest fruits into a pot and add the fruit juice. Add the vanilla powder and sweetener of choice.
- 2Heat the mixture over medium heat until it boils. Cook for 3–5 minutes, until the fruit softens slightly and releases its juices.
- 3Remove the pot from the heat. Stir the lemon juice and chia seeds into the hot fruit mixture. Mix thoroughly with a whisk so the seeds don't clump together.
- 4Let the fruit mixture rest for about 15 minutes at room temperature, then transfer it to the fridge for at least 2 hours. The chia seeds will swell and naturally thicken the pudding into a gel-like texture.
- 5Meanwhile, prepare the vanilla cream: in a bowl, mix Greek yogurt (or Skyr), protein powder and almond milk. Stir until you get a smooth, pourable cream.
- 6Pour the chilled fruit pudding into glass jars first, then top with a generous layer of vanilla cream.
- 7Garnish with a fresh strawberry or a mint leaf and serve.
Nutritional benefits
Berries are rich in anthocyanins, which have anti-inflammatory effects, while chia seeds provide omega-3 fatty acids and fiber for healthy digestion.
