In a jar, mix the almond milk, coconut cream, vanilla and erythritol until the mixture is completely smooth.

Add the chia seeds and cinnamon. Whisk intensively for 2 minutes to prevent lumps from forming at the bottom of the jar.

Close the jar and place it in the refrigerator for at least 6 hours or overnight. The chia seeds will absorb the liquid and create a thick, pudding-like texture.

Stir the mixture once more before serving. If it's too firm, add a splash of almond milk.
