Preheat the oven to 170 °C. Line a baking pan thoroughly with baking paper.

In a large bowl, mix all the dry ingredients: almond flour, flaxseeds, chia seeds, chopped nuts, pumpkin and sunflower seeds, baking soda, and salt.

In another bowl, whisk the eggs until slightly foamy. Add the melted oil and apple cider vinegar and mix well.

Pour the wet ingredients into the dry ones. Mix until you get a thick, uniform mixture. Let it stand for 5–10 minutes so the seeds absorb the moisture and the mixture thickens.

Transfer the mixture into the baking pan and smooth the top with a spatula. If desired, sprinkle some extra seeds on top for decoration.

Bake for 45–55 minutes. The bread is done when it feels firm to the touch and a toothpick inserted comes out dry.

Let the bread cool in the pan for at least 15 minutes, then transfer it to a wire rack. Slice only once completely cooled to preserve its structure.
