Quickly blanch the fresh spinach (pour boiling water over it for 30 seconds) and immediately cool it under cold water to preserve its vivid green color.

Squeeze the spinach well, place it in a blender together with the eggs and water, and blend into a completely smooth green liquid.

In a large bowl, mix the spelt flour, salt, and nutmeg. Make a well in the center and pour in the spinach-egg mixture.

Using a wooden spoon or a hand mixer with dough hooks, beat the batter until bubbles start to form and it easily separates from the bowl. The batter should be thicker than pancake batter, but still pourable. Let it rest for 10 minutes.

Bring well-salted water to a boil in a large pot. Reduce the heat slightly so the water is just gently simmering.

Pour the batter into the boiling water using a spätzle maker or a colander with larger holes. If you don't have such a tool, you can scrape the batter off a board with a knife into small pieces (the traditional method).

The dumplings cook very quickly – once they float to the surface (about 1–2 minutes), remove them with a slotted spoon and drain.

Heat oil or butter in a pan and quickly sauté the nuts. Add the cooked dumplings, toss briefly to combine the flavors, and serve.
